Baht'at Bardic 2024 Feast Menu

A few general comments first:

  • As I write, The date is 19 Jan 2024. This menu is not set in stone at this point, but is unlikely to change much. As recipes are finalised the dietary notes may alter slightly. (EG I may adjust something to make it vegetarian, etc.) (Also, I'm writing this without the cookbooks in front me me.)
  • I intend to provide enough variety in each course to accomodate some common dietary restrictions (eg vegetarian, gluten-free). and sauces separately in many cases.
  • Those with allergies or specific dietary restrictions should consult the feast menu to determine if the feast will be suitable or if they should make alternate arrangements.

  • Please note that the kitchen is used by others and we can not guarantee that there is no cross-contamination, although we make every effort to avoid it.

Notation: V=vegetarian, OL=Ovolacto vegetarian, VG=vegan, DF=dairy free, GF=gluten free

The menus and ingredients

Traveller's Fare:

Brouet de hongherie (Hungarian broth) (GF,DF)
Pork and root vegetable stew.
Caboches in potage (GF,VG,DF)
Cabbage, onion, and leek soup
Crettonnee de fevez (Crettonnee of beans) (OL)
fava bean purée with milk. Possibly some chickeny bits on the side. Those are not vegetarian.

Saturday Breakfast

Votte lombarde (GF,OL)
sweet eggs and cheese, custardy
Malaches (DF)
essentially black pudding
Sawgeat (GF)
eggs with sage and sausage (or sage-y sausage)
Bread (VG, probably)
bought in
Scones (OL)
I might make scones, why not? No promises, though.
Butter/Spread, jam
Some will be vegetarian, some dairy free, etc.
Tea and coffee
because I'd like to survive the weekend

Saturday afternoon feast, in two courses

First Course

joke rice, actually pasta, orzo basically, with cheese

either puréed or yfried

with a sauce or two
pommys morles (V,GF)
sweet apple and rice dish
Second Course
fish cuminade (GF,DF)
fish in cumin sauce
char de mouton (GF,DF)
lamb (or mutton) in sauce
fritours of herbs (V)
went down a treat at Flintmoot a while back. Some could be made vegan by omitting the honey.
