Stuff with Salsa

It is the time of year when the CSA provides everything, or nearly everything, that I need to make a good salsa - peppers, tomatoes, sweet corn, cilantro and, if I'm lucky, onions. Given that bounty, it would seem almost ungracious not to whip some up.

I should note that this week will be less a recipe than an ode to joys of throwing fresh ingredients into a bowl in proportions that are pleasing to one's own taste. There are a few guidelines that I think it is important to follow, though:

You need some tomatoes and some sort of peppers. Tomatoes can be in whatever form appeals to you, fresh and cut, canned and crushed, or anything in between. Likewise, peppers are a matter of preference, serendipity and heat tolerance. For this batch, I used cut fresh tomatoes, some fresh mildly hot green chilies, and some pickled jalapeños.

I think that onions are a necessity, but I understand that some benighted souls think otherwise. I had no fresh onions, but I had some that I started pickling a couple of weeks ago, and they worked a treat. Garlic falls into the same category, and I had not only some pickled garlic, courtesy of a friend, but also some pickled garlic scapes that I made from a previous week's farmshare. That also worked just fine.

Sweet corn is not always used, but I like it in this sort of thing. I just cut it off the cob and toss it in. Cilantro is not to everyone's taste, but it is to ours, and so in it went.

I used a lot of pickled vegetables so I didn't feel like I needed to add any more acid, but usually I'll put in a splash of lime juice if I have it, or lemon juice if I don't.

Tomatoes are good for the base

Can be skipped by those who abhor it
Raw or pickled, onions are good
And garlic should be understood

To add sweetness will finish the job.

If you haven't use foods that are pickled
Some lime juice should gently be trickled
Or lemon if lime isn't handy
Would also be just fine and dandy
A quick pinch or two of plain salt
Is a formally needed default

A quick stir to combine and then wait
Before dolloping it on the plate.

The "plate" in this case was a tortilla topped with beans and pork. I had let some white beans go all day in the crock pot with a smoked ham hock and some water, and quite literally nothing else. We topped it with the salsa and a bit of crème fraîche (instead of sour cream) and we were good to go.
